I really should keep better notes. This recipe came from a friend. Not sure which one. It’s been spilled on and rewritten so many times I can’t even vouch that the ingredients match the original. No matter, this quick and tasty marinade is versatile and doesn’t mind the odd adjustment (see variations for some ideas). The adventuresome can use it for salad dressing. Conservatives will be converted to Asian-inspired cuisine.

The beauty of this recipe is that it complements any kind of barbecue fare – veggies, seafood, chicken, pork, beef. Kebabs on the menu? Not problem. Just mix and match to your heart’s content. Under its loving embrace even tofu is tasty.

Anything Goes Multi-Purpose Marinade

Ingredients

  • 1/2 cup olive oil
  • 1/3 cup lime juice
  • 2 to 4 tbsp sesame oil (I tend to use less)
  • 1 tbsp grated ginger
  • 1 tsp salt
  • 1 tsp ground pepper
  • 1/2 tsp dried thyme
  • 2 cloves garlic, minced
  • 4 whole cloves
  • 1/2 cup fresh parsley, chopped

Instructions

  • Mix ingredients together.
  • Pour over fish, chicken, shrimp, veggies or what ever you’re going to barbecue and marinate for 30 minutes at room temperature. If you want to marinate items for 1 hour or more (overnight is fine) do so in the refrigerator.

Variations

  • Add a few chili flakes for warmth.
  • Try marinating a combination of the above meats and veggies in kebab form.
  • Use fresh thyme (2 tbsp) instead of dried.
  • Garnish finished product with fresh chopped cilantro.
  • Use as a salad dressing over fresh greens. Just remove the cloves before serving.
