Breakfast, Canadian Style

Ten-year-old Nicholas and his family are coming to visit from Australia. Being fresh out of Vegemite, I was a bit worried about what to give him for breakfast. While his parents assure me he’s easy to feed, after hearing his enthusiastic request for pancakes, I’m now concerned we won’t be able to fill him up.

So I’m shamelessly using this child as an excuse to dust off some recipes and see which version I like best. While my sister is known for her cornmeal pancakes, and my mom makes a mean buttermilk rendition (with or without blueberries), I have a soft spot for waffles. And I haven’t made them in years.

In what will likely become known as The Great Griddle-Off, my family will gather, mess up the kitchen and force-feed a small Australian child just so I can find you the best breakfast fare.

Ingredients

  • 2 eggs, separated
  • 1 3/4 cup milk
  • 1/2 cup oil
  • 1 3/4 cup all purpose flour
  • 1 tbsp baking powder
  • 1/4 tsp salt

Instructions

  1. Heat waffle iron.
  2. Beat yolks until smooth.
  3. Beat in milk and oil
  4. In large bowl, sift dry ingredients together.
  5. Add to egg yolk mixture and stir until just wet. It will be lumpy. Resist the urge to over-mix.
  6. Beat whites until stiff.
  7. Carefully fold the whites into the batter. Again, do not over-mix.
  8. Bake until brown in a hot waffle iron.
  9. Serve with real maple syrup and a score card.
