However, the last few years I've been having the same trouble! They look terrific, I store them correctly, then after 2 days, they remain rock hard with squishy exteriors. Ick.<br /><br />I'm only purchasing from markets now, but it's still hit and miss. I did end up making some jam from them...just because I couldnt throw out 7 litres of peaches..and the recipe had lots of sugar ...so they were used ....I bought Red haven this weekend from the market...for my peach /red pepper preserve...hope I am not disappointed!
